BBQ Pulled Pork Sandwiches

OMG! We had the BEST sandwiches ever today.

So i was up at 5 am, and decided that i wouldn't want to cook the next day, so i put together a slow cooker meal for lunch the next day. It ended up lasting for lunch, and then we kept the slow cooker on until dinner and had it again for dinner. It was AMAZING. Ok, I cheated a little bit and used one of the McCormick spice packets, but a made a little change to the recipe.

If any of you have ever heard of the restaurant chain Quaker Steak and Lube then you know that they serve the hottest wings in the country, their oldest hottest wing sauce was Atomic Wing Sauce, and now they sell it. It actually comes in a pill bottle, with the locking cap and all, and uses an eye dropper to dispense the sauce. It has a little waver inside that you fill out that says they are not responsible for anything that happens.

The reason i mention the wing sauce is because i added it to my recipe. I was a little hesitant, but decided that if it turned out bad i would just make sandwiches for dinner. But lucky it turned out AMAZING. I know i keep using that word, but i cant described it any other way.

Ingredients:
  • 1 McCormick Slow Cooker Series: BBQ Pulled Pork Seasoning Packet
  • 3 lbs bonless port shoulder roast, well trimmed
  • 1/2 cup Ketchup
  • 1/2 cup firmly packed brown sugar
  • 1/3 cup cider vinegar
  • 5-7 drops Atomic Wing Sauce (or 2 tbs chili powder for a kick)
Ok so its says boneless, but i used a 3 1/2 lb bone-in shoulder and i did not trim the fat at all. I placed the fat so it was facing down and used it as a buffer between the crockpot and the pork during the cooking process. It makes the meat more juicy also, just not as healthy (but as a chef i must go for flavor over health).

Also where it says cider vinegar, i went to the store and found apple cider vinegar (you can get the cheapest one because really they are all the same), because it adds a hint of apple to whatever you are making and it makes it a little healthier.

Cooking Method:
  1. Place pork in the slow cooker
  2. Mix seasoning package, brown sugar, vinegar, and Atomic Sauce (or chili powder) until well blended.
  3. Pour mixture over the pork, make sure to coat the pork well.
  4. Cover and cook on LOW for 8 hours minimum.
  5. Remove carefully from slow cooker and place on cutting board. Use two forks to pull the meat apart into desired chunk sizes. (i pull it until it is thin so it doesn't pull the large chunks out of the sandwich)
  6. Return pork to slow cooker and mix into the juice that remains.
  7. Heat for at least 30 min (but again the longer the better) on the LOW or WARM setting.
From there you can decide how you want to serve it. One idea that came to mind, especially if your serving a large family or throwing a party, was a full dinner meal. Garlic Mashed Potatoes, Green Beans, Jalapeno Corn Bread, Orange Slices, and BBQ Pulled Pork Sandwiches (served either on a hamburger bun or plain white/whole grain bread).

So there's what we had for dinner on Sunday night. YUMM!
