Anna Potatoes

Anna Potatoes

Ingredients:

3 ea 70 Count Potatoes
4 oz Olive Oil or Melted Butter
Salt and Pepper as needed (Love)

Method:
  1. Peel Potatoes and place in cold water.
  2. Slice potatoes thin (about 1/16 of an inch), place into a large bowl. (do not place in water)
  3. Mix 3 oz of oil and salt & pepper with the potatoes.
  4. In a non-stick pan add 1 oz of oil to cover bottom of pan. Layer the potatoes using all of them. Make the bottom layer of potatoes look pretty because this is going to be the only layer you will see.
  5. Place pan over high flame burner until edges turn golden brown.
  6. Place pan into a 350 degree convection oven or a 400 degree standard oven until fork tender.
  7. Remove from oven and let rest in a warn area for 10 minutes.
  8. Flip bottom side up onto a cutting board and slice into wedges.
Notes:
a) If you are using a standard oven you have to flip the potatoes 3/4 of the way during the cooking process to brown the top. A convection oven will do this for you.
b) The characteristics of an Anna Potato should be crispy on the outside and tender on the inside, oozing with oil or butter.
