Granola

Granola

Ingredients:

2 oz almonds (sliced)
1 oz coconut (shredded)
1 lb rolled oats
4 oz wheat germ
3 oz vegetable oil
8 oz honey
4 oz brown sugar
1 oz dried apricots (julienned)
1 oz dried cherries (sliced)
1 oz dried figs (sliced)
1 oz raisins, white or brown

Can add more of all dried fruits, almonds, or coconut.

Method:
  1. Toast almonds and coconut until golden brown.
  2. Combine rolled oats, almonds, coconut and wheat germ in a large bowl.
  3. Place oil, honey and brown sugar in a saucepan and bring to a simmer, stirring frequently until sugar is all dissolved (about 3 minutes). Remove from heat.
  4. Pour syrup over the oat mixture, toss to coat oat mix evenly with syrup.
  5. Spread coated mixture evenly on a parchment lined sheet tray. Place into a 350 degree oven and cook for 5 to 10 minutes. Remove and stir mixture and return to oven for 5 to 10 minutes more or as long as neccessary to evenly brown lightly.
  6. Remove from oven and cool. Be careful! I burned myself here.
  7. Break mixture apart and toss with the dried fruits in a large bowl.
  8. Serve at room temperature as a snack or as a garnish with fruit and/or yogurt.
